Danish Coffee Cake | Brunsviger

Brunsviger is a beloved Danish coffee cake made with a soft yeasted dough and topped with a rich, caramelized mixture of butter, brown sugar, and cinnamon. Sweet, gooey, and comforting, it’s a staple for cozy gatherings over coffee in Denmark.

Ingredients
  

Cake
  • 250 ml whole milk, lukewarm 1 cup + 2 tbsp
  • 8 g instant yeast 2⅓ tsp
  • 120 g unsalted butter, at room temperature 1 stick
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 2 eggs
  • 500 g all-purpose flour 4 cups
Topping
  • 150 g unsalted butter 10½ tbsp
  • 250 g brown sugar 1⅓ cups
  • 2 tbsp ground cinnamon

Method
 

  1. Combine the milk, yeast, and sugar in the bowl of a stand mixer and let it sit for 5 minutes until bubbly. Add the rest of the dough ingredients, except for the butter. Once mostly incorporated, start adding in the butter 1 tablespoon at a time, only adding in the next tablespoon after the first one has been fully mixed in. Knead the dough on medium speed until smooth, shiny, and elastic – about 8-12 minutes.
  2. Spread the dough evenly across the bottom of a 9×13" (23x33cm) well-greased cake pan. Cover with plastic wrap and let it rise until doubled, about 20-40 minutes depending on the temperature in your kitchen.
  3. Preheat the oven to 200℃ / 400℉.
  4. Gently heat the topping ingredients in a small saucepan on the stove until melted and shiny.
  5. With greased fingers, make dimples across the top of the risen dough. Pour the topping evenly over it.
  6. Bake for 20-25 minutes, until golden and bubbly. Let the cake topping harden before slicing into it. This is best served slightly warm on the day it is made.
